Chicken Jalapeño Smashburger Sliders + Ranch Water!

Memorial Day weekend is upon us and we’re excited to share a few Summertime favorites from our kitchen


We are making a variation on a traditional SMASHBURGER, a Chicken Jalapeno SMASHBURGER slider.  Using Pineapple Jalapeno Jam as our condiment!~ It is sooo yummy!



Ingredients for Burgers (Yields 6-8 Smashburgers)

  • 1 pound ground chicken 92 % lean, dark meat preferred.

  • 2 teaspoons Worcestershire Sauce

  • 3 Tablespoons white onion diced fine

  • 2 Tablespoon fresh or pickled Jalapenos diced fine

  • 1/2 teaspoon garlic powder

  • 1 teaspoon dijon mustard 

  • 1 teaspoon of your favorite seasoning blend. 


Additional Ingredients


DIRECTIONS

  • Mix all of these ingredients together and divide into 6-8 small balls. 

  • Get your Blackstone very hot, add a little oil or butter to the griddle, I prefer a mixture of butter and oil.

  • Place the balls on the griddle  providing enough space in between to SMASH them down.

  • Using a parchment square to prevent sticking SMASH each one down.

  • Let cook 75% of the way through, flip making sure to get the crust with the patty. Flip and cook for one minute on the other side. 

  • Top with Pepper Jack Cheese and place on a toasted bun that has That Dam Jam Pineapple Jalapeno Jam spread on the top bun.

Add your favorite toppings and ENJOY!


 

Ranch Water 💦


This light and refreshing drink was born in West Texas by Ranchers who were looking for a way to cool off after a day working in the sun.

This simple drink is so easy to prepare and if you follow the original preparation method, you do not have any glasses to clean, BONUS.

The original is made with lime, but it is just as refreshing with grapefruit. 





INGREDIENTS


  • Topo Chico Mineral Water- Great to replace minerals lost during the day.

  • Limes, think 1/2 -1 lime per bottle. Limes are known to have a cooling effect on the body. Cut limes into small enough pieces to fit in the bottle mouth.   You can also make some fresh squeezed lime or grapefruit juice, to simplify the process. 

  • Salt or tajine- to replace sodium lost due to perspiration. 

  • Your favorite silver or Blanco tequila, I am using Frida Kahlo hand crafted tequila


DIRECTIONS


  • Open a bottle of chilled Topo Chico, take a big swig out of the bottle. 

  • Add 1/2 -1 1/2 ounces of tequila to the Topo Chico

  • Squeeze in as many limes as you prefer or top off with fresh squeezed lime or grapefruit juice. 

  • Put your thumb over the mouth of the bottle and turn upside down gently to mix.

  • Sprinkle a little salt or tajin on the mouth of the bottle or in the mixture if you prefer.
