Citrus may not be local but it sure is in season, you can find it by the bagful at every grocer in town. We are going to take these bright juicy orbs and turn them into a fresh peppery salad using arugula, fresh oranges, Parmesan, red onion and candied nuts for a sweet crunchy finish. This salad comes together in a snap!
Let’s make the dressing first.
In a large jar add
1/2 cup Olive oil
1/4 cup Orange flavored vinegar or White Balsamic or other fruit flavored vinegar.
3 tablespoons orange juice
1 tablespoon finely chopped shallot
1 teaspoon dijon mustard
1 teaspoon honey
1 teaspoon salt
1/2 teaspoon pepper
Salad
1 container arugula or 1 container of fresh spring salad greens
I head of radicchio chopped
1 red onion sliced into thin rings.
3-4 oranges peel sliced away- and cut into supremes or slices
Wedge of Parmesan cheese
1/3 =1/2 cup of your favorite nuts, your way! Candied, roasted its your call.
In a small bowl add sliced red onion add 1-2 tablespoons of shaken salad dressing to the onions and let sit for a minute to take the “bite” out of the onions.
Add arugula and radicchio to a large bowl and dressing 1 tablespoon at a time toss to coat lightly. Keep adding dressing one tablespoon at a time until all of the greens have a light sheen.
Place oranges on bottom of platter, add sliced onion, then top with salad greens.
Using wedge of parm, make long ribbons of cheese across the salad. Then top with nuts.
This is a lovely bright salad that wakes up the tastebuds and lets you know for sure that spring is on its way!
