Brown Sugar Glazed Cottage Ham With Dam Jam

We got this recipe from our lovely friends over at Queen City Sausage! Cottage Ham is a Cincinnati tradition. Essentially it is seasoned pork shoulder, slowly smoked to perfection with our hickory wood process. We are now using Queen City Sausage’ cottage ham in many of our recipes with great acclaim.
Ingredients
—1 Queen City Sausage—Cottage Ham (About 1 LB.). Sliced very thin. Cottage ham is fully cooked
— 5 OZ That Dam Jam-Pineapple Ghost Pepper Jam (Or your favorite Flavor!)
—10 OZ Frozen green beans
—10 Baby russet potatoes. Washed with skin on
—Sea salt
—2 TBLS Olive oil-to melt on potatoes
—1-2 TBLS Brown sugar
—Ketchup-optional for dipping the potatoes in
—Parsley to garnish
Note: The potatoes take a bit of extra time but really compliment the meal
Directions
Slice the potatoes across the width about 3/4 of the way through, allowing about 1/8” between slices
Place the sliced potatoes on a baking sheet lined with foil. Brush the potatoes with olive oil and dust with salt. Place in a preheated 450 degree oven for 50-60 minutes or until the potatoes are tender
While the potatoes are baking, slice the entire cottage ham piece. Slice as thin as possible. As mentioned, Cottage ham is fully cooked at our Sausage Factory. The secret to bringing out all the flavor is to never over-cook it. Just heat it slightly
Cook the green beans according to package-microwave instructions
Once the potatoes are cooked, let them remain on the sheet pan, add the cottage ham. Baste the top of the ham with the jam and dust with brown sugar. Add the cooked green beans. Place back into the oven. This time turn on the broiler on low for about 3 minutes to warm up the ham
Serve immediately
