Dinnertime Dilemma? Try This Fresh Asian Noodle Bowl!

Fresh Asian Noodle or Rice bowls featuring That Dam Jam!!
Everyone is looking for ways to stretch their food budget without sacrificing flavor or nutrition. A delicious and easy way to do that- is to start with ground chicken. This can be a fun and interactive family experience by setting up a MAKE YOUR OWN RICE or NOODLE BOWL BAR!! With a couple simple pantry items and your favorite flavor of That Dam Jam you have a delicious and easy meal for four under $20.00. That is something to share with your friends!!! Who knew saving money could be so fun, delicious and creative.

Ingredients for meatballs
1 pound ground chicken
1/2 cup panko bread crumbs
1 egg -beaten
1/2 cup carrot finely grated
2 finely chopped green onions
2 Tablespoons soy sauce
1 teaspoon salt
1/2 teaspoon pepper
*optional- finely diced jalapeno
Ingredients for meatball glaze
3 tablespoons of Dam Jam warmed in a saucepan.
SIDE NOTE! --> 1 jar of That Dam Jam will make 4 batches of meatballs!
Brush for applying to meatballs.
Directions
Gently mix together all of the meatball ingredients.
Allow to chill for 30 minutes or overnight in a covered bowl - Yes, you can put this together the night before which makes for an easy mid week dinner!!
Chilling the mixture allows the breadcrumbs to absorb the liquid and the flavors to come together, it also helps the meatballs hold their shape when scooping in the next step
Preheat oven to 425 degrees
Line a cookie sheet with parchment paper.
Using a small cookie scoop (2 tablespoon size) scoop out meatball mixture and roll into balls. This method will make about 16 large meatballs which means each serving is approximately 4 meatballs.
Place a cookie sheet with meatballs in the hot oven on the middle rack and bake for 10 minutes, remove from the oven and brush That Dam Jam onto each meatball. Put back in the oven for an additional 10 minutes.
Serve
Use a spatula to remove the meatballs from the cookie sheet and serve on a bed of cooked rice or noodles.
For a fun meal idea everyone can to make their own noodle or rice bowl with their favorite veggies and sauces. The awesome thing is you can use whatever you have in your veggie bin.
