That Dam Jam foil pack Shrimp Fajitas! Ready in 25 minutes!!
Do you know what is better than a delicious lent recipe?
A recipe where your house does not smell like fish or shrimp and clean up is a breeze.
That is what you get when you make That Dam Jam foil pack Shrimp Fajitas.
Get ready
Preheat oven to 450 degrees
Place rack on lowest part of the oven
You will need a large sheet pan.
Two large pieces of aluminum foil sprayed with cooking spray (2 ft long each)
Ingredients serves 3-6 people
~Let's get the veggies ready~
3 bell peppers of different colors sliced into 1/2 inch pieces
1-2 large white onions sliced into 1/2 inch pieces
1 package of button mushrooms or portobello sliced in half or into 1/2 inch pieces
Optional veggies
Cherry tomatoes cut in half
1 cup fresh or frozen corn
Sliced jalapeños
Zucchini or yellow squash cut into 1 inch pieces.
Add veggies to a large bowl
Toss with 2 tablespoons vegetable oil or olive oil and then mix in 1 tablespoon of your favorite taco seasoning.
Take a 2 foot sheet of aluminum foil and place vegetables on half of the foil, fold over and crimp the edges of the foil to seal in all of the flavor and juices.
Put on the baking sheet and place on the bottom rack of the oven. Bake for 15 minutes.
DO NOT ADD Shrimp packet yet this is a two step process
Let's talk shrimp
Please do not splurge on large shrimp you will need to cut them up if you do, this is a great time to use smaller less expensive shrimp 40-50 count.
Make sure shrimp are completely thawed and shells are removed.
Spray foil with cooking spray.
In the same bowl you mixed the veggies in add the shrimp and 2 tablespoons of your favorite flavor of That Dam Jam.
Add shrimp to the second piece of foil and fold over into a packet.
AFTER the 15 minutes are up for the veggies, add the shrimp packet to the baking sheet and bake for 10 -15 minutes more.
Remove pan from the oven and use scissors to open, serve directly from the baking sheet to reduce clean up.
BE careful there will be HOT STEAM coming out of the foil packets
