That Dam Jam! Sweet, Hot and Sour Shrimp*

Serves 4


INGREDIENTS

1 pound peeled and deveined Shrimp

1 cup sliced Red Pepper

1 cup snow pea pods or broccoli florets

1 cup matchstick carrots

4 cups cooked rice

4 Tablespoons Soy Sauce

1 tsp chopped garlic

1 tsp grated ginger


INSTRUCTIONS

  1. In a small bowl mix 2 Tablespoons That Dam Jam! With 2 Tablespoons Rice Vinegar - Set aside

  2. In a large skillet over high heat add 3 Tablespoons of Canola oil

  3. Add vegetables and stir fry until tender crisp-about 5 minutes,

  4. Remove from the pan.

  5. Add 1 Tablespoon of Canola oil to pan-add shrimp and stir fry until pink.

  6. Add veggies back to the pan, add soy sauce, garlic and ginger. Stir fry for 1 minute.

  7. Add jam and vinegar mixture to the pan and stir to coat.

  8. Serve immediately over cooked rice.

  9. Enjoy!

* Diced chicken would work as a replacement for shrimp
