1 block CinSoy Firm Tofu
1 small red bell pepper (cut into bite sized pieces)
5 scallions (whites cut into 1/2 inch pieces)
2 1/2 tbsp That Dam Jam Pineapple Jalapeño Jam (or other pepper jam)
1 1/2 tbsp CinSoy Soy Sauce
Cut tofu in large cubes. Sear in a hot pan until crisped and golden brown on one side.
Flip the tofu and add the peppers and scallions.
Cook until browned and crispy on the second side.
Mix the jam and soy sauce together in a bowl.
Reduce the heat in the pan and pour over the glaze. Stir and allow the glaze to cook for 1-2 minutes and coat the tofu and vegetables.
Serve over rice and enjoy!
