SIMPLE PEPPER JELLY RECIPE - EASY CLEANUP!
INGREDIENTS NEEDED :
2 Bone-In Skinless chicken thighs (also great w/ salmon or Mahi Mahi!)
1 packet of precooked rice or leftover rice. (Approx 1.5 cups)
2 bell peppers chopped into long strips
1 onion chopped into long strips
2 TBSP. That Dam Jam (Choose your preferred flavor! All will work!)
1 small can pineapple tidbits (drained)
DIRECTIONS :
Step 1 : Preheat oven to 350 degrees
Salt and Pepper Chicken
Step 2 : Chop peppers & onions into long strips
Step 3 : Mix drained pineapple tidbits with cooked rice
Step 4 : Pull out 2 -24 inch pieces of tin foil and spray with nonstick spray.
Step 5 : Place half rice with pineapple tidbits on the right half of the foil.
Step 5 : Place half of the onions and peppers on top of the rice.
Step 6 : Place one chicken thigh on top.
Step 7 : Put 1 tablespoon of That Dam Jam on top of each piece of chicken.
Step 9 : Fold foil over top & crimp the edges of the foil to create an airtight packet.
Step 10 : Place on a baking sheet and bake for 40-50 minutes .
Remove from the oven and put the entire pouch on a plate, cut open to serve.
